As a kid I had mayonnaise all of the time, but I had no idea what it was.  At some I figured it out, but I still didn't give too much thought into what goes into the goopy white stuff I was putting on my sandwich.  Then, in a moment of peek boredom, I decided to make some.  

It turns out that, with the right tools, mayo couldn't be easier to make from scratch and it turns out much better than the jarred stuff you get at the grocery store.

If it was up to me, everything would be spicy, so I present to you my recipe for spicy mayo.

Tools

  • Immersion blender
  • Glass container just barely wider than the immersion blender

Ingredients

  • 1 Egg
  • 1 Tablespoon Lime Juice
  • 1 Teaspoon Dijon Mustard
  • 1 Garlic Clove, minced
  • 2 Tablespoons Frank's Red Hot
  • 1 Teaspoon Soy Sauce
  • 1 Cup Grapeseed Oil
  • Salt
  • Pepper

Steps

  1. Put the egg, lime juice, mustard, garlic, hot sauce, and soy sauce in the glass container.
  2. Pour the oil on top of the other ingredients and allow it to sit for 10-20 seconds in order to settle.
  3. Insert the immersion blender into the glass container, making sure that the bottom of the blender is at the very bottom of the glass container.  Turn the blender on high until mayonnaise forms.  You can tilt the head of the blender in order to emulsify all of the ingredients.
  4. Add salt and pepper to taste.
  5. Store the mayo in an airtight container and refrigerate.

The trick here is really to use the right sized container and then to not overthink it. You can add or remove any ingredients of your choosing as long as you have the egg, the oil, and some acid in the mix.
